Lolli’s Potluck Pasta Salad

Lolli’s Potluck Chicken Pasta Salad is a summertime staple in our family, and people always ask for the recipe! This recipe serves 10-12 people, so it’s great for a family meal or as something to take for a “potluck” gathering with friends!

Lolli’s Potluck Pasta Salad

Ingredients:

  • 4-6 chicken breasts
  • Honey Dijon salad dressing (or similar)
  • 1 package penne, bowtie or rotini pasta
  • 1 jar sun-dried tomatoes
  • 1 purple onion
  • 1 box of frozen sugar snap peas (uncooked)
  • 1 cup shredded parmesan cheese
  • Salt and pepper to taste
  • 1-2 bottles of Red Wine Vinaigrette Dressing

Directions:

Marinate the uncooked chicken breasts in Honey Dijon salad dressing overnight, and then bake them in the dressing. After the breasts are fully cooked, drain off the salad dressing from the chicken and then chop or shred chicken. Cook and drain the pasta. Drain and chop the sun-dried tomatoes. Thaw and drain the frozen peas. Thinly slice or dice the purple onion. Start with one bottle of Red Wine Vinaigrette dressing and add more to taste. Stir the ingredients all together in a large bowl and refrigerate until ready to serve! You can add black olives, spinach, or other vegetables according to taste and what you have handy. Serve it on a pretty platter and VOILA, Y’ALL!™
