Seasonal Cranberry Salsa

Lolli is the queen of simple Southern cooking with a Tex-Mex twist, and this Cranberry Salsa exemplifies that special knack! Its festive “Roll Tide” red color and versatility as an appetizer or condiment make it a perfect addition to your holiday menu! I remember when Lolli used to jar and wrap this popular treat for teachers gifts when my brothers and I were young. It was always a big hit as an edible Christmas treat, garnering frequent requests for the recipe! Well, here y’all go:

Seasonal Cranberry Salsa:

Ingredients

  • 1 bag (12 oz) fresh cranberries
  • 1 large Granny Smith apple (peeled, cored, and chopped)
  • ½ large red pepper (chopped)
  • ½ medium purple onion (chopped)
  • ¾ cup sugar
  • 1/3 cup apple juice
  • 3 tbsp. fresh cilantro (chopped)
  • 2 tbsp. pickled jalapeños (chopped)
  • 1 tsp. grated lime zest

Directions
Place cranberries, apple, red pepper and onion in food processor and pulse until chopped. Transfer mixture into a large glass bowl. Stir in remaining ingredients until thoroughly blended. Cover and refrigerate for up to two weeks. Serve with crackers or chips of choice. Also delicious served over cream cheese as a spread!
