As we are all encouraged to stay home right now due to the Coronavirus pandemic, now is a great time to experiment with some new recipes. Get your Kitchen Kids involved while they’re home from school, too, and make meal prep a family affair! While it’s tempting to indulge in all of the non-perishable items stocked in the pantry, incorporating fresh and healthy meals as much as possible is a great way to get through this time safely and with your health in tact. Lolli and I have been enjoying a keto-inspired lifestyle recently, so we wanted to share some of our favorites with you all, in case you have the groceries for it!
The ketogenic diet (or keto diet, for short) is a fat-burning diet that is similar in many ways to other low-carb diets – but this one actually works!
- FOODS TO EAT: meat, fish, eggs, butter, nuts, healthy oils, avocados and plenty of low-carb veggies
- FOODS TO AVOID: carb-based foods like grains, sugars, legumes, rice, potatoes, candy, juice and sugary fruits
The easiest way to start is by finding keto recipes that offer good alternatives to foods you eat the most, so you feel satiated without feeling deprived. Getting lots of FIBER in is key, too! Whether you are fully into the keto diet or just want to incorporate some keto-inspired recipes and products into your family meals, here are some that we are Lolli and Me approved!
Keto Toast
All you need are some fiber toasts, sliced avocado, an egg (cooked to your liking) and some seasoning for a delicious keto-inspired breakfast! Lolli and I prefer Trader Joe’s Everything but the Bagel Sesame seasoning for whatever is on the breakfast menu. And you can incorporate the fiber toasts into meals for the kids as well! My kids love fiber toasts with cream cheese and fruit jam, smoked salmon/lox, or ricotta and honey. If you let the kids add their own toppings, they tend to actually eat it!
Keto Pork Rind Panko Breadcrumbs
Not ready to give up breaded food? Neither are we! Get ready to explore a new world of possibilities with Pork Rind Panko bread crumbs! Pork Panko is a CARB-FREE, gluten-free breading made exclusively from pork skin and salt. You can make your own Keto Pork Rind Panko, or you can buy the pre-made pork rind panko bread crumbs. You can use these no carb breadcrumbs in any recipe that calls for panko breadcrumbs, and my kids can’t tell the difference in their chicken fingers when I use these over other breaded and fried recipes! Use them for crunch and as a substitute to coat vegetables, to bread chicken, or in meatballs and meatloaf recipes!
Keto Queso
Like most Texans, we’re big queso fans in our house. It can be dangerous to keep queso dip at home, but not when there is a great new vegan way to enjoy the flavors of traditional queso without the dairy, soy, gluten or grains! We love Siete Cashew Queso, which comes in both Mild Nacho and Spicy Blanco. Pair it with grain free tortilla chips and your favorite salsa for an indulgent snack at home! We also eat this cashew queso cold with carrots and other sliced veggies as a subsititute for hummus. It’s good on everything!
