Every fall and holiday season I can remember has involved helpings of Lolli’s signature broccoli cornbread recipe. As a comfort food with festive green flecks, I think of it as “Christmas Cornbread,” and it remains a staple on our seasonal menu through the new year. Lolli is sharing her recipe this year, so now y’all may include this in your own holiday spreads:
Lolli’s Christmas Cornbread
Ingredients
- 2 boxes Jiffy© cornbread mix
- 4 brown eggs
- 2 sticks unsalted butter (softened)
- 1 cup cottage cheese
- 1 box frozen chopped broccoli (uncooked, thawed and drained)
- 1 yellow onion (chopped)
Directions
Stir all of the above ingredients together in a mixing bowl until thoroughly combined. Ensure thawed broccoli is completely drained and dry before adding. Pour mixture into a buttered 8” x 11” clear baking dish, and place in the oven at 350 degrees for 35-40 minutes or until top is lightly browned and beginning to feel firm to the touch. Let cool for 10 minutes and cut into squares to serve.
